エピガロカテキンガレート
カテキンは、ポリフェノールの中のフラボノイド、その中でもフラバノールという種類に入ります。緑茶中には、(-)エピカテキン、(-)エピガロカテキン、(-)エピカテキンガレート、(-)エピガロカテキンガレートなどの約4種類のカテキンが含まれています。その中でも(-)エピガロカテキンガレートが一番多く、含まれるカテキンの50～60％を占めています。(-)エピガロカテキンガレートは、カテキンの中でも抗酸化作用をはじめとし、広範な生理活性を持っています。
また、抗ウィルス効果以外にもお茶に含まれるカテキンが殺菌作用
と抗毒素(解毒）作用を持つことは実証されています。
茶カテキンは、多くの病原菌の細胞膜や細胞壁を破壊し、抗生物質と同じような作用で殺菌します。
茶カテキンは、病原菌が作り出す多くの毒素に瞬時に結合して毒素の力を失わせ、抗毒素抗体と似た作用で解毒します。
そして、茶カテキンの中ではエピガロカテキンガレート(EGCg）
が強力なカテキンとしてこの作用の主な担い手となっています。
